BLACK BEAN SALAD WITH CHIPOTLE MUSTARD VINAIGRETTE
Ingredients:
- 1 can (15oz.) black beans, rinsed and drained
- 1 can (8.75oz.) whole kernel corn, drained
- 1 bunch sliced green onions
- 1/4 cup chopped green, red, or yellow peppers
- 1/4 cup diced fresh tomato
- MUSTARD VINAIGRETTE
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 2 tablespoon fresh lime juice
- 2 tablespoon EAST SHORE Chipotle Mustard
- 3 tablespoon chopped fresh cilantro
- 2 teaspoon chopped fresh oregano
- 1 crushed garlic clove
Directions:
Combine vegetables in a bowl and set aside. Combine all vinaigrette ingredients in a bowl and whisk to blend. Drizzle vinaigrette over the vegetables and toss to mix. Chill for at least 4 hours before serving. May be served as is, on a bed of mixed greens, or with tortilla chips.
